How to record Skype conversations on a Mac, even if you use a headset

Journalism.co.uk have been having similar thoughts to me. They've been trying to work out how to use a handset and record Skype on a Mac. They've had some success with Nicecast and a Plantronics headset, so if you've got a similar set-up, here are their instructions on how to do it. It all seems a bit fiddly so perhaps we should be petitioning Skype to add recording capabilities to their software.
